French Toast Muffins Rezept

Zutaten

  •     Makes 12 servings 
  • 2   cups low-fat all purpose baking mix, like Bisquick Heart Smart 
  •     ½ cup ground flaxseed 
  •     1¼ tsp. ground cinnamon, divided 
  •     ¾ cup unsweetened applesauce 
  •     ½ cup + 1 Tb. pure maple syrup, divided 
  •     ½ cup buttermilk 
  • 2   large eggs 
  • 1   tsp. vanilla extract 
  • 2   Tbs. sugar 
  •     ½ cup heavy cream 
  •     ¼ cup chopped pecans

Heat oven to 350ºF. Place liners in 12 muffin wells. In mixing bowl, stir together baking mix, flaxseed and 1 tsp. cinnamon

In small bowl, whisk together applesauce, maple syrup, buttermilk, eggs and vanilla extract. Stir into dry ingredients. Divide batter evenly among muffin wells. Bake 12 - 14 min. or until done. Stir together sugar and remaining cinnamon. While muffins are warm, sprinkle tops of muffins with cinnamon sugar (may need to lightly brush with melted butter)

In small bowl, beat heavy cream and remaining maple syrup together until thick. Transfer cream to pastry bag fitted with medium open star decorating tip. (Ateco #843) Pipe tops of muffins with cream. Garnish with pecans, if desired. Serve warm
