Peach tartelets with custard Rezept

Zutaten

  •     For 4 tartelets 
  • 100   g soft butter 
  • 150   g sugar 
  • 9   g vanilla sugar (1 sachet Dr. Oetker vanilla sugar) 
  • 1   pinch of salt 
  •     grated zest from one untreated lemon 
  •     1 egg (size m) 
  •     3 egg yolks (size m) 
  • 160   g flour 
  • 3/4   tsp. Baking powder 
  • 1   tbsp. + 150 ml milk 
  •     4 peaches 
  • 2   tbsp. Dark muscovado sugar 
  •     1 vanilla pod 
  • 150   g single cream 
  • 1   tsp. Starch flour 
  • 2   cl peach liqueur 
  •     powdered/ icing sugar for dusting 
  •     lemon balm for decoration 
  •     grease for ramekins 

Zubereitung

1. Beat butter, 100 g sugar, vanilla sugar and salt with a hand whisk. Incorporate 1 egg and 1 egg yolk. Sift flour and baking powder on beaten butter, stir in together with 1 tbsp. Milk. Divide batter in 4 individual greased ramekins (Ø 10 cm)

2. Wash and half peaches. Remove cores and cut into slices. Arrange peaches on batter and sprinkle with muscovado sugar. Bake 20 minutes in preheated oven (175°/ conv. 150°)

3. Slice vanilla pod and scrape out pulp. Bring 150 ml milk, cream, 50 g sugar, vanilla pod and pulp to the boil. Pull pot from stove and remove vanilla pod. Beat 2 egg yolks with starch flour. Stir in ¼ of the vanilla milk. Incorporate starch vanilla milk under constant stirring into the rest of the vanilla milk. While stirring warm milk on stove until thickened

Pour through a sieve into a cold bowl and let cool. Stir in peach liqueur when cold

4. Take out peach tartelets and let cool. Dust with icing sugar and decorate with lemon balm
