Apple & Oat Breakfast Muffins

Zutaten

- 240 ml buttermilk
- 85 g rolled oats
- 75 g raisins
- 120 g wholewheat flour
- 1 1/2 tsp baking powder
- 1 1/2 of cinnamon
- 1/2 tsp of salt
- 2 egg whites
- 3 tsbp honey
- 1 medium apple, cored and grated

- Line a muffin tin with 12 muffin cases. In a large mixing bowl, stir together the buttermilk, oats, and raisins. In a separate bowl, blend the wholewheat flour, baking powder, cinnamon and salt. Add the egg whites and honey to the oat mix, and blend thoroughly.

- Then blend the two mixtures together. Fold in the grated apple. Fill the muffin cups almost full. Bake in the oven at 175°C/350°F/gas mark 4 for about 20–25 minutes. Cool for 10 minutes before removing from tin.
