Asparagus cream soup Rezept

Zutaten

Für Ingredients for 4 people
  •     I onion 
  • 500 green asparagus 
  • 2   tbs butter or margarine 
  • 500 ml  vegetable stock 
  • 250 ml  milk 
  • 150 crème fraiche 
  •     Salt and pepper 
  • 1   tsp sugar 
  •     c. 2 tsp lemon juice 

Zubereitung

Peel and chop onion finely. Wash the asparagus and cut off the woody ends. Cut into pieces

Heat the fat in a pan. Cook the onions for about 6 minutes, and add the asparagus for the last 3 minutes. Add the stock and milk. Bring to the boil and simmer for about 10 minutes until soft. Remove a few asparagus tips after about 3 minutes and keep for garnish

Using a hand-blender, puree the soup mixture. Stir in the crème fraiche and season the soup with salt, pepper, sugar and lemon juice. Serve in bowls and garnish with the whole asparagus pieces
