Asparagus "soldiers" with boiled egg Rezept

  • 500 green asparagus 
  •     Salt 
  • 4   medium eggs 
  •     Sea salt 

Zubereitung

Wash asparagus and remove the woody ends. Halve the stems crossways. Cook the asparagus tips in boiling salted water for about 4 minutes. Discard the lower stem pieces and use for something else

Cook the eggs in boiling water for c. 5 minutes
3.
Place each egg in an egg cup and serve with asparagus tips alongside
4.
Cut off the egg-top and season with sea salt. Dip the "soldiers" into the yolk
5.
Preparation time c. 10 minutes

Per portion: c 410 kJ, 100 kcal. Protein 9 g, fat 7 g, carbohydrates 2 g
