Berry Star Pie (Weekend Baker) Rezept

  • 1   cup flour 
  • 8   Tbs. (4 oz.) cold butter, cut into ½” dice 
  • 3-4   Tbs. ice water 
  • 5   cups frozen raspberries 
  •     ½ cup seedless raspberry preserves 
  •     ¾ cup sugar 
  • 1   Tbs. lemon juice 
  • 1/4   cup cornstarch 
  • 1   pint (12 oz.) fresh raspberries Fresh blueberries (for garnish) 1 cup whipped topping (for garnish)

In food processor, pulse flour and butter together 10-12 times. Add 3 Tbs. ice water and pulse 5-7 times. If mixture seems dry, add a teaspoon at a time, pulsing after each addition. When the dough just begins to form larger crumbs and can be squeezed together with your fingers, empty the processor bowl onto a floured work surface and press dough together to form a disk (4.5”x1”) Cover with plastic wrap and refrigerate for 45 minutes

Meanwhile, in a medium saucepan, combine frozen raspberries, preserves, sugar and lemon juice. Place over medium heat and cook stirring occasionally, until raspberries are thawed and mixture begins to simmer. Cook for 3 minutes. Stir together the cornstarch and ¼ cup cold water and add to saucepan. Bring to a boil and cook for 1 minute, or until mixture thickens and becomes translucent. Remove from heat, and cool to room temperature. Fold in fresh raspberries. Roll out dough on a floured surface into a 12” circle. Coat a 9” pie plate with cooking spray and fit dough into it. Crimp edges and refrigerate for ½ hour. Line dough with a piece of foil coated with cooking spray. Fill foil with pie weights and bake for 30 minutes, or until edges begin to brown. Remove foil and weights and bake for an additional 5-7 minutes, or until crust is light golden brown. Cool on a rack to room temperature. Fill pie crust with raspberry filling. Refrigerate for 4 hours, or overnight. Pipe decorative star shapes with whipped topping using a pastry bag and an open star tip (Wilton 1M). Fill star and outline with fresh blueberries
