Breaded Apple Pork

  •     Serves 4 
  • 1   medium Bramley cooking apple  
  •     salt and freshly ground black pepper 
  • 1   tbsp double cream or crème fraîche, optional  
  •     about 75g dried breadcrumbs 
  • 1   tbsp linseeds  
  • 4   pork escalopes  
  •     ¼ tsp dried sage 
  •     plain flour, to dust 
  • 1   free range egg  
  • 4   tbsp rapeseed oil  
  • 2   small eating apple  
  •     knob butter 
  •     a little light muscovado sugar

First make the apple sauce, Peel, core and dice the cooking apple and place in a small saucepan with 1 tbsp water, cover and cook gently for 10 minutes until very soft and pulpy. remove from the heat and beat to a puree with a wooden spoon. Season with salt and pepper and stir in the cream if using. Set aside
Mix together the breadcrumbs and linseeds and spread out on a plate, Beat the egg. Season the pork with salt and pepper and sprinkle with the sage. Lightly dust with flour, then dip into beaten egg and coat with the breadcrumb mixture. Heat the oil in a large frying pan and fry the pork for 8–10 minutes or until cooked through, turning once. While the pork is cooking thickly slice the eating apple into rounds. When the pork is cooked remove from the pan and keep warm. Add the butter to the pan and cook the apple for 2–3 minutes turning until beginning to soften, sprinkle with a little sugar, turn over and sprinkle the other side with a little more sugar. Cook for 1–2 minutes turning until the sugar begins to caramelise and brown. Serve the pork with the apple sauce and garnish with the caramelised apple slices
