Chicken Noodles with Courgette & Chilli

  •     Serves 4 
  • 200 g   dried medium egg noodles  
  • 1   tbsp sunflower oil  
  • 3   skinless chicken breast fillets, cut into thin strips  
  • 2   medium carrots, cut into thin sticks  
  • 1   medium courgette, cut into thin sticks  
  • 250 g   broccoli, cut into little florets  
  • 1   red pepper, cut into thin sticks  
  • 2   tbsp sweet chilli sauce  
  • 1   tbsp soy sauce  
  •     Juice of 1 lime 
  •     Small handful roughly chopped fresh coriander or flat-leaf parsley  
  •     Thinly sliced chilli , to garnish (optional)

1 Bring a large pan of boiling salted water to the boil, add the noodles and cook for 3-5mins following packet instructions. Drain and set aside
2 At the same time, heat the oil in a wok or large frying pan. Add the chicken and stir-fry over a high heat for 3 mins until starting to brown. Add the carrots, courgette, broccoli and pepper and stir-fry until just softened
3 Mix together the sweet chilli sauce, soy sauce and lime juice and pour into the pan. Bring to boil, stirring then add the noodles and mix well. Remove from the heat, stir in the coriander or parsley and serve garnished with thinly sliced chilli, if using
