  •     Serves 4

  •     Spray olive oil  
  • 450 g   salad or new potatoes, halved  
  • 8   chicken legs, skin on  
  • 2   courgettes, sliced  
  • 1   orange and 1 yellow pepper, deseeded and sliced  
  • 4   garlic cloves, whole  
  • 7 g   fresh thyme sprigs, plus extra for garnish  
  • 300 g   cherry tomatoes (preferably some with the green top on) 
  •     Sea salt and freshly ground black pepper

1 Preheat the oven to 180C/ gas 6 and spray the oven dish with spray oil to coat. Place the potatoes, and the chicken, skin-side down, in an ovenproof dish and bake for 15 mins
2 Remove the dish from the oven and turn the chicken thighs over. Add the courgettes, peppers, garlic and thyme sprigs. Mix and season with salt and pepper. Bake for 40-45 mins, adding the cherry tomatoes in after 15 mins of cooking, until the chicken is cooked through and golden brown
