Corn Relish Dogs Rezept


Für cup cooked corn kernels
  • 1   cup cooked corn kernels 
  •     ½ cup diced red pepper 
  •     ¼ cup chopped scallion 
  • 2   tsp. vegetable oil 
  • 1   Tbs. each, cider vinegar and sugar 
  • 2   lb. red potatoes 
  •     ¼ cup sliced yellow pepper 
  •     ¼ cup minced sweet onion 
  • 1   clove garlic, minced 
  • 2   Tbs. each chopped parsley, thyme and basil 
  •     ¼ cup red wine vinegar 
  •     ¼ cup olive oil 
  • 1   tsp. Dijon mustard 
  •     ½ cup mayonnaise 
  • 2   tsp. honey mustard, like French’s 
  • 1   lb. (8) hot dogs 
  • 8   hot dog buns 
  • 8   lettuce leaves

In bowl, toss together corn, red pepper, scallion, oil, cider vinegar and sugar. Let stand 10 min. Cook potatoes in boiling salted water 10 min., or until tender. Drain. Slice potatoes when cool enough to handle. In bowl, whisk together garlic, herbs, vinegar, oil and 1 tsp. mustard. Toss with warm potatoes, pepper and onion. Season to taste with salt and ground black pepper, if desired. In bowl, stir together mayonnaise and honey mustard
Heat grill. Cook hot dogs according to package directions. Spread hot dog buns with mayonnaise mixture. Top with hot dogs. Spoon corn relish over hot dogs. Place lettuce leaves on plates. Spoon potato salad onto lettuce. Serve with hot dogs
