Ginger Honey Salmon with Green Beans Almondine and Whole wheat couscous

Für  Tbs. ginger preserves
  • 1   Tbs. ginger preserves  
  • 1   Tbs. honey  
  • 2   Tbs. chopped scallion  
  • 6   oz. salmon fillet, skinned  
  •     ½ cup sliced red bell peppers  
  •     steamed green beans.

Preheat broiler. In small bowl combine preserves, honey and scallion. Place salmon on roasting pan coated with cooking spray. Season salmon with salt and pepper and brush with ginger-honey mixture. Place peppers on roasting pan and season with salt and pepper.
Broil 2” from heat source 3-4 minutes until salmon is just cooked through and peppers are slightly roasted. Serve with ½ cup steamed green beans sprinkled with 1 Tbs. toasted natural sliced almonds and ½ cup cooked whole-wheat couscous.
