For Cookies & Hat Rim
2.
On lightly floured work surface, roll cookie dough out to ½ cm-thick. Cut out 14 cm circle from dough. Bake on paper-lined baking sheet until done. Let cool set aside
3.
Using 2-inch shamrock or clover-shaped cutter, cut out cookies from remaining dough, rerolling dough scraps as needed. Arrange on baking sheet. Bake 8 min. or until done. Let cool
4.
In small bowl, combine white confectioners’ sugar glaze with enough green food color to create desired color. Frost ½ the shamrock cookies with the green frosting. Using white glaze, create small clover pattern in green cookies, using toothpick drag through white glaze. Frost remaining cookies with white glaze and create clover pattern using green frosting. Let set
5.
Make Pot
6.
Prepare 2 boxes pound cake mix according to package directions, adding cocoa powder. Pour batter into greased 2 ½ qt. ovenproof glass bowl. Bake on sheet pan 1 hr., 30 min., or until toothpick inserted in cake comes out clean. (Note: cake may get really brown on top before it is cooked through. Let cake cool 5 min in bowl. Invert and remove cake from bowl. Let cool completely. Trim cake to level
7.
Place cake on serving platter. Frost cake with chocolate frosting, using small spatula to create decorative design of overlapping vertical strokes (see tear or orange frosting with lines). Chill until frosting is set
8.
For Hair
9.
In large bowl, microwave orange or white candy melts 30 sec., or until melted, stirring often. Add enough orange food coloring to create bright orange color. Pour mixture into small foil-lined 8x4-inch loaf pan. Let set at room temperature until firm but not hard. Using zester, create curls and shavings for hair. Set aside
10.
For Head & Top of Hat:
11.
Prepare 1 box pound cake mix according to package directions. Pour batter into greased 5 cup ovenproof glass bowl and a greased 8 ½ x 4 ½ inch loaf pan. Bake until toothpick inserted in cakes comes out clean. Let cool 5 min. in pan. Invert onto wire cool rack. Let cool completely
12.
Trim top of round cake to create flat surface for face. Place cake flat side down on clean work surface, trim about 2cm off the left and right side of cake perpendicular to face to create flat surface for cake to rest on and hat to rest on (see drawing)
13.
Trim top of loaf to create flat surface. Using 88mm (3 7/16 inch) round cookie cutter, cut 2 rounds from loaf cake. (One round will be for hat, the other will be to help stabilize the head)
14.
In bowl, combine 1 can vanilla frosting and green food coloring to create desired green color. Spread bottom of one 88 mm cake round with green frosting; place frosted side down into center of baked 14 cm cookie to form hat. Place hat on rack set over foil lined pan. Microwave green frosting 30 sec., or until melted, stirring once. Pour frosting over hat to coat completely (hat should be smooth – food stylist may want to put a thin layer of frosting on hat before pour melted frosting over). Let set
15.
Unwrap and microwave yellow Starburst candy 10 sec. at a time until Starburst is pliable. Roll yellow Starburst out and cut out gold buckle for hat. Thread black string licorice through buckle to create black band and affix to hat using green frosting. Unwrap and microwave green starburst candy 10 sec. at a time until Starburst is pliable; shape into clover and affix behind buckle using green frosting
16.
In bowl, combine 1 can vanilla frosting and brown and pink food coloring to create beige/flesh color. Spread bottom of one side of remaining 88mm cake round with beige frosting; place frosting side down onto bottom (small side) of head. Place head on wire rack set over foil line pan, with largest (flat side for face) facing out. Microwave beige frosting 30 sec., or until melted, stirring once. Pour beige frosting over head to cover
17.
Roll out white air head candy and cut to create eye shape. Using white frosting attach chocolate chips. Attach vanilla wafer cookie for nose. Cut licorice and attach for mouth. Carefully transfer head to frosted pot and place as far back as possible. Add orange hair to sides and bake of face (but not top). Place hat on top of head. Surround head with gold coins and surround base of pot with cookies
