Mahi Mahi served with Yam Puree Rezept

Zutaten

Für tsp. each lemon juice, grated ginger, olive oil and chives
  • 1   tsp. each lemon juice, grated ginger, olive oil and chives 
  • 1/4   tsp. lemon zest 
  • 6   oz. mahi mahi fillet 
  • 1   Tbs. olive oil 
  • 1   each sliced shallot and garlic 
  • 2   cups sliced kale 
  • 1   cup sliced shiitake mushroom caps (2 oz.) 
  • 1   medium yam 
  • 1   Tbs. butter 
  • 1   tsp. candied ginger 

Zubereitung

Wisk together lemon juice, ginger, olive oil and chives. Marinate fish in mixture. Grill fish 4 min. on each side, or until done

In skillet over medium low heat cook shallot and garlic in olive oil 1 min. Add kale and mushrooms, toss to coat; cover and cook 5 min., stirring occasionally, or until kale is tender

Bake yams at 400ºF 40-45 min. or microwave until soft in center. Peel, mash with olive oil butter and ginger
4.
Serve fish with yams and kale
