Noodles in creamy asparagus sauce

Für  Ingredients for 4 people
  • 500 g   green asparagus  
  • 50 g   rocket  
  • 1   lemon preferably organic/unwaxed  
  • 500 g   ribbon band noodles  
  •     Salt  
  • 200 g   full-fat soft cheese  
  •     Pepper

Wash asparagus and remove the woody ends. Cut into small pieces. Wash the rocket and shake it dry. Wash the lemon in hot water and rub it dry. Remove the zest in thin strips. Halve the fruit and squeeze out the juice
Prepare the noodles in boiling water according to packet instructions. Add the asparagus for the last 4 minutes of cooking then drain. Mix the cheese, 2-4 tbs lemon juice with 100 ml cooking water and stir together. Season with salt and pepper
Add the noodles back to the sauce and stir. Arrange the noodles to serve and sprinkle with the lemon zest and rocket
Preparation time c. 25 minutes. Per portion c 2470 kJ, 590 kcal. Protein 19 g, Fat 15 g, Carbohydrates 94 g
