Oatmeal Breakfast Cups Rezept

Zutaten

  •     Base mix makes about 10 servings 
  •     Base Mix 
  • 2   cups old fashioned oats 
  •     ¼ cup ground flaxseed (optional) 
  • 2   Tbs. flour 
  • 2   tsp. baking powder 
  • 1   tsp. ground cinnamon 
  •     ¾ tsp. salt 
  •     1½ cups milk 
  •     ½ cup unsweetened applesauce/berry applesauce 
  •     ½ cup brown sugar or maple syrup 
  • 1   large egg 
  • 2   Tbs. safflower oil 
  • 2   tsp. vanilla extract

Heat oven to 350ºF. Line a muffin pan with papers

In large bowl, stir together oats, flaxseed, baking powder, cinnamon and salt. In medium bowl, whisk together milk, applesauce, brown sugar or maple syrup, egg, oil and vanilla. Combine with dry ingredients, mixing well. Stir in add-ins. Divide batter evenly among muffin wells. Bake 20 – 25 min., or until light golden brown

For Chocolate Banana: add chopped banana and chocolate chips

For Coconut: add chopped banana and shredded sweetened coconut

For Cranberry Walnut: add dried cranberries and chopped walnuts

For Blueberry: add blueberries

For Apple-Cinnamon: stir in grated apple and chopped pecans and a pinch cinnamon

For Pumpkin: add a little pumpkin purée and sprinkle with pepitas

For Chocolate-Banana: stir in 1 cup chopped banana and 1/3 cup chocolate chips

For Banana Coconut: stir in ½ cup each chopped banana and shredded sweetened coconut

For Cranberry Walnut: stir in ½ cup each dried cranberries and chopped walnuts and 1 tsp. each orange zest and juice
15.
For Blueberry Lemon: stir in 1cup blueberries and 1 tsp. each lemon zest and juice
16.
For Apple Raisin Pecan: stir in ½ cup each grated fresh apple and ¼ cup each raisins and chopped pecans

For Pumpkin Apple: stir in ½ cup each pumpkin puree and diced apple, ¼ cup pepitas and1 tsp. pumpkin pie spice

For Apricot Walnut: stir in ½ cup each chopped dried apricots and chopped walnuts and 1 tsp. each orange zest and juice

Note: These cups may be frozen. Oil is optional
