Pumpkin and Apple Mash

  •     Serves 4 
  • 900 g   pumpkin flesh  
  • 1   vegetable stock cube  
  • 1   cox eating apple  
  • 25 g   butter  
  • 2   tbsp cream or milk  
  • 2   tsp whole grain mustard  
  •     salt and freshly ground black pepper

Place the pumpkin flesh in a saucepan with just enough water to cover. Crumble in the stock cube. Bring to the boil, Reduce the heat cover and simmer gently for 15–20 minutes until tender. Drain well
Meanwhile peel core and dice the apple. Melt the butter in a small pan and add the diced apple, cook over a low heat for4 minutes until the apple is just beginning to soften. Add the cream or milk to the pumpkin and mash well. then beat in the sautéed apple and mustard. Season taste and serve immediately
Delicious with grilled steaks and roast lamb
