Scallops with plum sauce

- 150 ml mirin or sweet rice wine
- 1 tbsp honey
- 1 tsp ground star anise
- 1 tsp ground ginger
- 500 g plums stones removed, chopped
- 12 scallops, with the roe trimmed off
- 1 tbsp vegetable oil
- 1 tbsp finely chopped fresh chives
- 200 g samphire or spinach, steamed

- Place the mirin, honey and spices into a pan and bring to the boil. Cook over a medium heat for 4-5 minutes, or until the mixture reaches a syrupy consistency, then add the chopped plums and remove from the heat. Mix well to evenly coat the plums in the sauce

- Brush the scallops with the oil and season with salt and freshly ground black pepper. Heat a frying pan until smoking, then sear the scallops for about 30 seconds on both sides, or until golden-brown all over

- To serve, spoon a little of the plum sauce into the bottom of four serving bowls and place a scallop on top of each bowl. Scatter over the chives and serve with the samphire or spinach
