Spiced Crab Apple Pickle

Zutaten

Für  kg whole crab apples
  • 1 kg   whole crab apples  
  • 2–3   strips lemon rind  
  • 450 g   sugar  
  • 450 ml   red wine vinegar  
  • 1   cinnamon stick  
  • 1–2   whole cloves  
  • 3   peppercorns  

Zubereitung

Put crab apples in a pan with 900 ml water and lemon rind and simmer until tender. Remove pan from heat and strain, reserving liquid. Put sugar and vinegar in a pan and add 700 ml of liquid from the fruit. Tie spices in muslin and add to liquid. Heat gently, stirring, until sugar dissolves; bring to boil for 1 minute. Add crab apples and simmer for 30 minutes, reducing syrup to a coating consistency. Remove muslin bag after 30 minutes. Pack fruit in 6 jars of 340 ml each. Pour over syrup and cover with airtight tops
