Tofu Breakfast Scramble Rezept

Zutaten

Für oz. cubed firm tofu
  • 3   oz. cubed firm tofu 
  • 1   tsp. tomato paste 
  •     ¼ tsp. turmeric 
  •     ½ cup each sliced mushrooms and diced red peppers 
  •     ¼ cup chopped scallion 
  • 1   cup baby spinach leaves 
  •     ½ cup diced tomato 
  • 1   Tbs. each chopped red onion and parsley leaves 
  • 1   clove garlic, chopped 
  • 2   tsp. lime juice 
  • 1   slice whole wheat bread, toasted 
  •     Fresh fruit for plate

In bowl, toss tofu, tomato paste and turmeric together to coat. Let stand 5 min. Mash half the tofu. In non-stick skillet over medium high heat, cook mushrooms, peppers and scallions 2 min. Add tofu, cook 30 sec.; toss in spinach and cook 30 sec.

Transfer to serving plate. In bowl, combine tomato, red onion, parsley, garlic and lime juice. Garnish plate with salsa and toast.
