Tofu Breakfast Scramble

Zutaten
- 3 oz. cubed firm tofu
- 1 tsp. tomato paste
- ¼ tsp. turmeric
- ½ cup each sliced mushrooms and diced red peppers
- ¼ cup chopped scallion
- 1 cup baby spinach leaves
- ½ cup diced tomato
- 1 Tbs. each chopped red onion and parsley leaves
- 1 clove garlic, chopped
- 2 tsp. lime juice
- 1 slice whole wheat bread, toasted
- Fresh fruit for plate

- In bowl, toss tofu, tomato paste and turmeric together to coat. Let stand 5 min. Mash half the tofu. In non-stick skillet over medium high heat, cook mushrooms, peppers and scallions 2 min. Add tofu, cook 30 sec.; toss in spinach and cook 30 sec.

- Transfer to serving plate. In bowl, combine tomato, red onion, parsley, garlic and lime juice. Garnish plate with salsa and toast.
