Tortilla Pie

  •     Makes 6 servings 
  • 1   cup rice  
  • 1   can chicken broth (14.5 oz.) 
  • 1   cup tomato sauce or salsa, like Herdez ranchera (8 oz.) 
  • 7   burrito size flour tortillas (10 inch) 
  • 3   Tbs. vegetable oil, divided  
  • 1   large zucchini sliced (10 oz.) 
  • 1   large yellow onion, chopped  
  • 1   lb. ground beef  
  • 2   cloves garlic, minced  
  • 1   can enchilada sauce, like Old El Paso (10 oz.) 
  • 1   can black beans, drained (15 oz.) 
  • 3   medium tomatoes diced, divided (about 2 ½ cups) 
  • 1   pkg. shredded Mexican cheese blend (8 oz.) 
  • 1   pkg. shredded mozzarella cheese (8 oz.) 
  •     For garnish lime, cilantro, chopped tomatoes and scallions

Prepare rice according to package directions substituting chicken broth for water. Stir in tomato sauce/salsa
In large skillet over medium high heat, toast tortillas 1 min., turning once until lightly browned in spots. Set aside. Cook zucchini in 2 Tbs. oil 3 min., stirring occasionally until tender. Season with salt and ground black pepper if desired. Transfer mixture to large bowl. Stir in tomatoes. Return skillet to heat
In skillet, cook onion in remaining oil 2 min., or until tender. Add ground beef and garlic stirring occasionally until lightly browned. Stir in enchilada sauce and black beans. Simmer 5 min
Heat oven to 400ºF. Line baking sheet with foil. Coat with cooking spray. In bowl, toss together shredded cheese. Place 1 tortilla on baking sheet. Sprinkle with ½ cup cheese mixture. Spread with half the beef/bean mixture. Cover with second tortilla. Spread with ½ cup cheese and half the rice. Cover with third tortilla. Spread with ½ cup cheese and half the zucchini/tomato mixture. Cover with fourth tortilla. Spread with ½ cup cheese and beef mixture. cover with fifth tortilla. Spread with ½ cup cheese and remaining rice. Cover with sixth tortilla. Spread with ½ cup cheese and remaining zucchini/ tomato mixture. Top with remaining tortilla. Spread remaining tomatoes and half the scallion over tortilla. Cover with remaining cheese. Bake 5 min., or until cheese on top is melted and heated through. Garnish with scallion, sliced lime and cilantro
