Plum cake

- 175 g butter
- 500 g plums
- 5 tbsp dark sugar or coconut sugar
- 175 g wholemeal flour
- 175 g ground almonds
- 3 eggs
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 50 g dark chocolate, chopped
- 2 tbsp hazelnuts

- Heat oven to 180C/gas 4. Butter and line the base of a round 20cm cake tin
- 2.
- Halve and stone all the plums, reserve 8 halves and roughly chop the rest
- 3.
- Put the sugar, butter, flour, ground almonds, eggs, soda and baking powder into a large bowl and beat with an electric hand mixer for 2 mins, until smooth. Stir in the chopped plums, hazelnuts and chocolate and then pour the mixture into the cake tin. Use a palette knife to even the top

- Arrange the halved plums over the top of the mixture. Bake for 45 mins until the top is golden and a skewer comes out clean when inserted into the middle
